This is a Spatchcock Chicken that was cooked using Boomas BBQ - Clucked and Plucked chicken Seasoning

Spatchcock Chicken Recipe

Preparation Time: 10 minutes

Cooking Time: 1.5-2 hours depending on the chicken size

Ingredients:

  • 1.5-2kg chicken
  • Clucked and Plucked Chicken Seasoning

Chicken Preparation:

  1. Remove the backbone of the chicken. Chicken shears work really well for this. Start by cutting approx 15mm to one side of the backbone. Cut all the way from the neck cavity to the exit cavity. Then repeat on the adjacent side of the backbone.
  2. Open and flatten out the chicken, meat side down (skin side up), pressing firmly on the breasts to crack and compress the chest down. Fold legs out and wings in.

  3. Once the chicken is nice and flat, apply seasoning to both sides. Nice even coating throughout. The more seasoning the stronger the awesome flavour

  4. Set up the gas or charcoal bbq for indirect cooking and get it up to approximately 325f/160c, The higher heat helps you achieve crispy skin.

  5. Place chicken in your bbq meat side down, skin side up

  6. Cook until the chicken reaches an internal temperature of minimum 165f/75c in all areas (light/dark meat)
