Why this peri peri rub works on chicken

Good peri peri chicken is all about balance: warmth from the chilli, a savoury garlic backbone and a tangy lift that cuts through crispy, charred skin. This peri peri rub gets that balance right without burying the chicken under heat, so you taste the bird and the seasoning together.

• Paprika, chilli and cayenne: a warm red colour and a gentle kick that won’t overpower the meat.
• Garlic, onion and coriander: savoury depth that makes every mouthful moreish.
• Cumin, black pepper and nutmeg: an earthy, rounded warmth in the background.
• Parsley and oregano: a herby freshness that lifts the whole blend.
• Tomato powder and food acid: a tangy note that balances rich, smoky chicken skin.

 Easy to use, two ways

There’s no fiddly prep involved. Use the rub straight from the jar when you’re short on time, or turn it into a marinade when you want the flavour worked right into the chicken.

• Dry rub: pat the chicken dry, shake over an even coat and cook as usual.
• Marinade: mix the rub with oil, coat the chicken well, then cook.
• Shaker jar: control exactly how much goes on, from a light dusting to a full coat.
