I have used other methods to low 'n slow with a kettle BBQ but all have been very time consuming & required a lot of babysitting. This as close to set & forget as you can get when used in a kettle. Perfect brisket & beef shorties with a fraction of the effort I would normally have to put in. My only regret is not buying one sooner
