This seasoning is centered on the flavours of garlic and bay leaf, complemented by a hint of heat from Turkish pepper and a touch of chili. It's ideal to enhance with red wine when preparing sausages, and it can also double as a flavourful seasoning for hamburgers.

Best paired with: Venison, Goat, Beef or Duck.

Size:

5kg Batch – 45g per 1kg of meat.

What you need:

  • 4kg Venison, Goat, Beef or Duck.
  • 1kg Pork (approximately 40% fat)
  • 500ml Red Wine
  • 1pk Carnivore Collective Wild Game Sausage Mix

Method:

  1. Mince meat with a medium plate.
  2. Combine spices, wine and water with meat.
  3. Mix thoroughly, kneading the meat until it is sticky.
  4. Fill chosen casings
