How Long Does It Take to Cook a Whole Lamb on a Spit Roaster?


A common question our customers ask is “How do you determine the exact cooking time when there are so many variables involved?”
We’ve prepared this guide to help you through the process, ensuring that your lamb is cooked to perfection every time.

 

Preparing for the Cook

Before you even place the lamb on the spit, there’s some important prep work to consider. Allow about 45 minutes from the time you light your charcoal to when the lamb is ready to be placed on the spit roaster. This initial period is crucial for ensuring that your coals are hot and ready, providing a steady heat source for the cooking process.

Cooking Time

For a lamb weighing between 14 to 17 kg (the most common size you’ll find at your local butcher) you can expect a cooking time of approximately 4 hours. This timeframe is ideal for achieving a perfectly cooked lamb with tender meat and a beautifully crisp exterior.

If you’re considering a larger lamb, such as one sourced from a local farm, keep in mind that while these can provide more meat, they also tend to be fattier. This can impact the cooking process and the final taste, so we generally recommend sticking to the 14 to 17 kg range for the best results.

 

Important Considerations: Temperature and Weather

Firstly, you’ll always want to ensure that your lamb is at room temperature before placing it on the spit. Cold meat, naturally, takes longer to heat and can result in an uneven cook.

Additionally, be mindful of the weather. Hot or cold temperatures, as well as wind, can significantly affect the cooking time. If it’s a particularly windy day, try to position your spit roaster in a sheltered location to maintain consistent heat around the lamb.
