Hardcore Carnivore was created by Jess Pryles. She is an author, a live-fire cook, and a total meat nerd. She is originally from Melbourne, Australia, but now resides in Austin, Texas.

She came up with the name Hardcore Carnivore during one of her recipe testing sessions, as she was constantly posting new recipes to her website and testing them out. She knew she was onto something special when she created and perfected the Black spice. The next logical step was to tell others about it! She set about getting it bottled, figuring that even if no one bought it, all of her friends would have a one-of-a-kind holiday gift...

Fortunately, her instinct that others would enjoy the seasoning as much as she did was correct. Black began to amass a sizable fan base, and the Hardcore Carnivore brand was officially born. Since then, they've added two more rubs to the lineup: Red seasoning, which has similar flavour profiles but is designed for use on pork and chicken, and Amplify, a savoury boosting powder made with chicken fat powder.

Her mantra for all Hardcore Carnivore seasonings is that they should enhance the meat without overpowering it. It's an approach that has piqued the interest of hundreds of thousands of people all over the world. They use high-quality ingredients, and all of our rubs are gluten-free, MSG-free, and made right here in Texas.

Today, the Hardcore Carnivore brand has expanded beyond seasonings and rubs to include apparel, a cookbook, unique kitchen tools, and products that are sure to appeal to any serious meat fan.
