Position the basket to the side of the kettle. Add wood chunks for smoking. Add water to the reservoir (deluxe model only). Open the vents on your kettle bbq until the temperature reaches 150 to 175 F.

Yes, absolutely you can use lump charcoal in a slow n sear. You can also use charcoal briquettes if you prefer.
