The best way to do this is to light the coals (check out our blog on lighting charcoal) then, spread the coals out evenly over the bottom of the BBQ. Place your grill over the coals and let it heat up for a few minutes before adding your steak. One method to achieve the perfect steak is called the reverse sear method which can be done incredibly well on the Slow ‘N Sear Kettle BBQ. You need to first get the steak to 125-130f (51 to 55c) indirect, take it off the BBQ. Allow it to rest for 10 minutes before searing it directly above the charcoal. Once it is cooked to your liking, remove it from the grill and there is no need to allow it to rest again.
No matter what type of BBQ you are using, always make sure that your steak is cooked to your liking before removing it from the grill. This will help to ensure that it is juicy and flavorful. Resting the steak for a few minutes after cooking will also help to lock in the juices and make it even more tender.
