Kosmos Q Apricot Glaze
Flaming Coals Porkinator Rub

    Step 1: Remove the Rind

    Start by carefully removing the rind, which is the outer skin of the ham. Make a cut all around the end and peel off the rind while keeping the flavourful fat intact.

     

    Step 2: Add Flavourful Touches

    Create diagonal cuts on the ham to form small diamond shapes. Optionally, insert cloves into the centre of each diamond for a fragrant aroma.

     

     

    Step 3: Balance of Rub and Glaze

    Apply a generous amount of Flaming Coals Porkinator rub all over the ham. Let it rest for 30 minutes to infuse the flavours. Preheat your smoker to 160°C (320°F). Coat the ham with Kosmos Q's apricot glaze for sweetness and a beautiful colour. Place the ham in a tray and rack.
